Why a goat dairy? After considering a children's bookstore, an Inn and a restaurant, we visited a goat dairy because we loved goat cheese. We fell in love with the animals. A farmstead goat dairy where we raised goats and made cheese suited my interest in food as well as my desire to do physical work and be with animals. Today Haystack Mountain is recognized as a producer of premium goat milk cheeses. We produce three raw milk cheeses and a variety of fresh cheeses--from plain and flavored Chevre logs to soft-ripened bloomy rind cheeses. Our cheeses have won many awards from the American Cheese Society and the World Cheese Awards.

Since 1894 our 100% All Natural family dairy has been operating in the same location. Over the years we have learned that making honest claims, providing quality service and the best products available are key to keeping customers satisfied. We grow our own alfalfa and corn to feed our cows so we can ensure the highest quality feed without the use of harmful pesticides. We have our own herd of cows so we can promise that they are not injected with hormones to increase their milk production. We bottle our milk ourselves. We use glass bottles for our reusable container because milk stays fresher in glass. Milk tastes like milk - not plastic, wax, or paper. Glass is a better insulator than other containers which helps the milk stay cold. Glass bottles are the only reusable containers that are non-porous. They can be thoroughly sanitized which ensures no residual flavors or odors.

Our cheese starts with antibiotic free 100% cows milk. We buy our milk from a few different farmers located in the Fort Collins Area. Therefore, the milk is fresh, only about 3 hours 'out of the cow'. No artificial colorings, preservatives, or additives are used in the cheese making process of our Camembert, which is all done by hand. ColoRouge is a natural rind cheese that is reddish-orange in color with a slight white finish. Like Jazz, the flavor changes as it ages: Soft and creamy with mild buttery overtones give way to complex spiciness.

Tedach Ranch is located in Bennett, CO, about 30 miles East of Denver. We are a small, family operated enterprise that raises livestock under simple, prairie grown conditions without the use of medications, stimulants or other growth modifying chemicals. Tedach Ranch raises heritage breed poultry, the kinds traditionally raised on family farms before the advent of agribusiness conglomerates. These standard varieties are not only rare and in need of conservation, but possess the natural health and vitality to excel in a free range operation. The poultry have daily access to natural prairie grass from as soon as they are old enough to go outside. They forage on pasturage that has never been farmed or had chemical fertilizers applied for at least the past 20 years. The birds are raised humanely, provided shelter from severe weather and given secure nighttime quarters safe from predation. The birds have constant access to clean, non-fluoridated well water. Their feed is 100% vegetarian and free of animal byproducts. The grain is purchased from local feed mills and is specially formulated for free range poultry.

We think our pork is among the finest you can find anywhere in the world. Of course, we're a bit biased, but the research supports our view. We raise the Berkshire breed of pigs, a breed renowned worldwide for its gourmet qualities. Berkshire pork is redder than other commercial breeds, and has greater marbling, leading to better taste and juiciness. Berkshires are one of the heritage meat breeds, and the breed is kept pure through registration with the American Berkshire Association. The majority of Berkshire pork raised in the U.S. is exported to Japan, where it is known as Kurobuta pork and commands a premium price. If you've heard of Kobe, the highest quality beef in the world, Kurobuta is the Kobe of pork. We don't raise our pork to taste like chicken and we don't call it the other white meat. In fact, we prefer to call it the other red meat. We believe great tasting, nutritious meats and vegetables can be raised without artificial chemicals, pesticides, and herbicides. We believe food raised locally tastes better and is a wiser investment than food trucked or flown in from great distances. We believe a thriving small farm can feed quite a few people and help create a vibrant rural community. We believe people should take a greater interest in where their food comes from and understand their connection to the earth and their place in the food chain. We believe diversity in agriculture preserves our national heritage and helps insulate us all from risks associated with monoculture, commodity food, and dominant control by a few large corporations.
